How Pinteresting: Philly Cheesesteak Stuffed Peppers

If you haven't seen the pin going around about making a cheesesteak inside green peppers, you are missing out friends! I recently saw it and visited the blog Peace, Love, and Low Carb, where the recipe is from! We decided this would be a fun dinner to try and this weekend I picked up the ingredients to make it: green peppers, an onion, roast beef, and provolone cheese! We omitted the mushrooms- yuck! I would love to share how this recipe worked for us!

I served it with sweet potato fries! Delicious and filling dinner!
I went to the deli counter asking for 3/4 pound of Boar's Head London broil roast beef and 12 slices of their {Boar's Head} low sodium provolone. I knew I was going to be using three green peppers and didn't want extra cheese laying around! When I went to make the dinner, I realized that the deli gal had given me 0.3 pounds of roast beef. FAIL. Gene was then re-routed on his way home to get me more roast beef. He got the cheap kind. Folks- you're going to want to get the Boar's Head. It cooked up better and tasted more like a Philly Cheesesteak than the cheap stuff he got me. I digress.

The peppers were crunchy, the contents inside were still juicy, and the cheese melted just right! This was definitely a win! I plan on trying it again maybe with chicken- like a tortilla-less stuffed pepper fajita! We were both so pleased with how it came out!
