Remember when I used to tell you all what I was cooking each week? It held me accountable for meal planning and helped share some awesome ideas with you! I fell off the bandwagon since this summer was tons of grilling whatever meat we pulled out of the freezer the day before to thaw! As autumn rolls in and we settle back into me cooking most nights, I thought I would start back up sharing what I'm making for dinner with you guys!
I'm not going to get all wild and crazy with Monday we're eating this and Tuesday we're eating that! I'm just going to list out 6 meals I'm shopping for in the hopes we actually eat them at some point during the week!
Meal 1: Pork Loin in the crock pot, potatoes (SHHHH!), sauerkraut. You want to know a secret? I SPLURGED on this meal and got raw sauerkraut. I'm excited to try it and think I'm going to LOVE this dinner! We're having it Friday night to get us ready for Rugged Maniac!
Meal 2: Spaghetti Squash with meat sauce. Salad on the side. Easy day, friends.
Meal 3: Salsa Chicken. This is one of my FAVORITE dishes. I drop some chicken thighs into the crock pot, cover them with salsa, and cook on low for 6 hours. Serving this bad boy up with quinoa.
Meal 4: Roasted chicken with root veggies. This is my new recipe for the week that I'll be trying. Wish us luck!
Meal 5: Potsticker Burgers, Asian veggies, and sauteed cabbage! We tried this one out last week and I have to tell you: I fell in love! I'll be sure to share the recipe I use with you guys!
Meal 6: Chicken & Apple sausages with salad and french fries. We'll probably have this one after Rugged Maniac because it's easy and I'm sure our bodies will love the carbs.
Looks like a pretty good week. I'm not even going to lie to you one bit: we're trying to be a little more cost effective with our food choices and stick to dinner at home more instead of going out two-three times a week. Salsa chicken is one of those easy at home dinners that I can toss in the crock pot, and it's paleo and clean! You'll probably see it every week. I am hoping to go out on a limb and try one new recipe each week though! I have a ton of cook books around this house that are collecting dust and I'm over it!
