Last week wasn't the worst week in my kitchen, although it wasn't the best, either! This week is another chance to meal plan, stick with it, and feed your family healthy! That's exactly what I plan on doing, and I think I have a solid plan going into it to keep me on target!

Meal 1: Salsa Pork Roast! This is a spin on my salsa chicken! I'm just dumping a pork roast in the crock pot, covering it with salsa, and cooking it on low for 6 hours, hoping for a tasty turn out! I'll be serving it up with quinoa and salad.
Meal 2: Chicken Kebabs! We have them in the freezer from Costco. They're seasoned and all ready to go. We've never had them before but they've been in there for ages, so we're giving them a try! I'll be serving them up with a big salad.
Meal 3: Burgers! There is just nothing simpler than grilling up some burgers- outside or inside on the skillet, and that's going to be one of our dinners this week! I'm serving it up with tomato and avocado slices and maybe a salad... we'll see how hungry we are that night!
Meal 4: Beef Roast. I had overwhelming success with my very first pot roast yesterday and am excited to try a different way this week! I'm cooking it in the crock pot with tomato basil sauce, shredding it, and serving it with quinoa pasta. Did someone say YUM!? I sure hope it is!
Meal 5: Pork Chops. Easy peasy with this one! I'm just going to marinade them in some Tessemae's and cook them on up. I'll be serving it up with salad :D
Meal 6: "Breakfast" for "dinner." Who made the rule that you're supposed to eat eggs and sausage in the morning and not at any other time during the day? We're doing to be having sausage and eggs for dinner one night this week. I'll be making my version of an omelet with cheese, tomatoes, and maybe green pepper of mushroom. It makes for one yummy plate and is a super quick and healthy dinner!
